Olive Oil4 very ripe Tomatoes, cut in fourths 1/3 cup dry bread crumbs 1/4 cup grated parmesan cheese 2 T. grated pecorino romano cheese 2 garlic cloves, finely chopped or shredded Salt and pepper to taste 1 lb. dried pasta (corkscrew...or any type) 1/4 cup loosely packed fresh basil, torn How Do I Make Baked Tomato Pasta?Here is how you make Baked Tomato Pasta: Preheat the oven to 425 degrees. Add 2 T. oil mixed with about 1/4 of water to the bottom of a 7 x 11inch pan (or any size). Place tomato quarters cut side up in pan. In a bowl, combine bread crumbs, cheeses, and garlic and toss to mix well. Sprinkle the crumb/cheese mixture over the tomatoes, making sure that each cut side is well covered. Sprinkle with salt and pepper. Bake until the tomatoes are cooked through and starting to brown on top...usually about an hour. (I had you put the water and oil in the pan to help keep the crumbs from burning...but watch them toward the end.) Toward the end of the baking time, bring a large pot of water to a boil and cook the pasta until al dente. Drain pasta, saving some of the pasta water. When the tomatoes are done, use a pair of tongs to remove most of the skins. Mash the tomatoes in the pan with the butter and the rest (2 T.) of the oil and basil. Add pasta to the pan and mix to combine. The tomato mash may be rather thick so use the pasta water to thin it out as you mix the pasta in. That's it.
