16 oz dry macaroni (we like small shells or cylinders, but the restaurant used linguine)
2 cups pureed avocados
1/2 cup milk
1/4 milk
1 cup chopped broccoli
1 cup chopped mushrooms
6+ cloves of garlic
1 tbsp ground cumin
1 tbsp olive oil
salt & pepper to taste
12 cups of tap water to boil noodles (with 1-3 cups reserved after cooking for sauce)

Here is how you make Avocado Pasta with Broccoli and Mushrooms:

Make a roux by combining the flour and oil in a sauté pan stirring constantly until there are no lumps and it begins to look a little more clear. Slowly stir in milk. Add spices, garlic and mushrooms and while stirring constantly, allow the mushrooms to reduce. Add broccoli and cook for a few more minutes until broccoli is wilted. Lastly stir in the pureed avocados and stir gently to combine. Simmer (while stirring often) and prepare the noodles with plenty of water and a generous pinch of salt. When draining the noodles, reserve some of the liquid, and use a cup or more of it to thin the sauce to the texture you would like. We used about a cup last night, and it made a velvety and creamy but not lumpy sauce. Serve with additional slices of avocado on top for beauty.
