Add salt, eggs, oil to well and mix with hands. Slowly add water and continue to mix until well incorporated. Knead until dough is smooth and firm. Add flour as necessary to keep from sticking. Roll dough into a 3-inch log and cut into 2-1/2 inch pieces. Roll each piece into a rectangle and place on Chittarra. Roll dough until strands drops through strings. (If no Chittara, cut into strands with sharp knife.) Toss in bowl and dust with flour to keep from stick. Repeat. In boiling salted water, toss the strands and cook for 5 to 10 minutes until al dente. Stir to prevent sticking together.
