This is my own recipe for fresh pasta noodles. I use a hand crank pasta machine and my hands for most of it. A good mixer with dough hooks can really come in handy. This recipe makes a double batch.To spice things up, I have varied it and included some of the following:- 1 tsp. cracked black pepper & 3 cloves minced garlic- 1 tsp lemon pepper- 1 tsp Italian seasoning & mild chili peppers- Parmesan & Ricotta cheeses What Course Is Homemade Fresh Pasta?Homemade Fresh Pasta is for Dinner. What Are The Ingredients For Homemade Fresh Pasta Recipe?The ingredients for Homemade Fresh Pasta are: 3 cups Whole Wheat flour3 Large Eggs 1 cup water Additional 1 cup flour for kneading and flouring down surfaces, machine and flouring flattened dough. How Do I Make Homemade Fresh Pasta?Here is how you make Homemade Fresh Pasta: Add flour to mixer (with dough hooks) or large bowl. Make a "bowl" in the flour and crack eggs into your flour "bowl". With the mixer on a medium-slow setting or stirring, start to bring in flour from the edges a little at a time. You want the dough to be a little sticky to the touch but not sticking to your hands. Use a bit of water or flour depending which way your dough goes.Once the dough is sticking to itself, but not the bowl, flour your working surface, remove dough and start kneading into a nice malleable ball. Roll into a 3" diameter log and flatten slightly. Cut into 1" strips. If you are concerned about dough drying out, place a dry tea towel over the cut strips.Take each strip and work with a little flour. Stretch out a little, place in floured pasta rolling side of machine, flour flattened piece out and set aside to dry a bit. If your dough seems a little too thick, allow to dry a tad and run through again at a thinner setting.Once you have a few pieces drying, you can start running them through the spaghetti or linguine cutting side. I almost always do linguine because it turns out better and the dough tends to stick to the machine less. Drop individual noodles into a pot of boiling water. They are cooked when the noodles float.Set in a bowl with a lid to keep in the heat.Repeat process until all dough is processed. You can use a little light olive oil on freshly cooked noodles to keep them from sticking together.Makes about 8 servings.Note: This dough freezes very well. Just be sure to double or triple wrap it to prevent freezer burn.
