1/4 cup extra-virgin olive oil
3 cloves garlic, minced
1/4 tsp. red pepper flakes
1/2 cup vegetable cocktail juice
2 cups peas or asparagus
1 bell pepper, such as green, red or yellow
1 carrot julienned
6 oz uncooked whole wheat pasta such as spaghetti, spaghettini, linguine or fettuccine
2 plum tomatoes, chopped
2 tbsp. grated Parmesan cheese
6 oz. cooked Pork Tenderloin, or chicken breast or 2 cups firm tofu, cubed or cut into bite size pieces.
(leave this out if you do not want any meat)

1 yellow or green zucchini, thinly sliced
1/4 cup chopped fresh Italian parsley
1/2 cup stewed tomatoes, in replacement of the veggie cocktail juice
6 oz cooked chicken breast instead of pork

Makes 4-6 servings1. If using tofu, In a non-stick skillet, heat 2 tbsp of the oil over medium-high heat. Brown tofu on all sides for about 2 mins.; remove to plate, reserve oil.2. In large shallow saucepan, heat remaining oil and reserved oil over medium heat. Cook garlic and red pepper flakes for 1 minute. Add veggie cocktail juice; bring to boil. Reduce heat and simmer for 1 minute. Add peas/asparagus, bell pepper, carrot and zucchini (if using); cook, stirring, for 10 minutes or until veggies are tender-crisp.3. Meanwhile, in a large pot of boiling salted water, cook pasta for 6-8 minutes or until Al Dente (read package instructions). Drain and return to pot. Add vegetables, meat or tofu and toss to coat. Stir in tomatoes, parsley (if using) and cheese.
