Start water and cook pasta according to package directions. Drain.While waiting for the water to boil: Mince the garlic. Cut the sausage and bell peppers into strips. Cut the onion into small wedges/strips. Cut the tomatoes (if using) into wedges (set these aside). In a large skillet, heat the olive oil. Add the garlic, and cook, stirring until you can just start to smell it (too long, and it will burn).Add the peppers and onions. Cook for approx. 2-3 minutes, as you want to keep them tender-crisp. At this point, you can either add the tomatoes and toss lightly, or put them in a separate serving bowl on the table.
