About 1 cup of broccoli florets, fresh or frozen
1/2 cup chopped onions
About 5 oz chicken breast meat cut in bite size pieces (1 large chicken breast or 2 small) (optional)
1 small chunk of red bell pepper diced (optional)
1 clove minced garlic
1/2 cup chopped zucchini (optional)
1/3 cup canned black beans, drained (optional)
1.5 tbsp cream cheese
2 tbsp Balsamic vinegar



How Do I Make Balsamic Vegetable Pasta?

Here is how you make Balsamic Vegetable Pasta:

Boil water and start cooking pasta. (Takes about 10-12 minutes)Coat skillet with cooking spray. Saute onions, bell pepper, and garlic. Add chicken pieces, broccoli, black beans, and zucchini. Chicken will take approx. 8-10 minutes. When chicken cooks through, deglaze skillet with vinegar. Allow vinegar to cook off and concentrate stirring occasionally for 5 minutes.By this time, pasta should be done. Drain and toss in a bowl. Spoon cream cheese on top. Add skillet mixture to pasta and toss together until the entire dish is coated with a Balsamic cream cheese glaze.Makes four 1.5 cup filling portions.
