1 medium eggplant, cut into chunks (about 2 cups)
3 summer squash, sliced (about 2 cups)
1 T. olive oil
1 small onion, sliced
1 red pepper, sliced (about 1 cup)
.5 package smoked turkey sausage sliced into half moon shapes
.5 c. grated mozzarella cheese
3 T. grated Parmesan cheese
8 oz ziti or similar sized pasta


How Do I Make Sausage and Roasted Vegetable Pasta Skillet?

Here is how you make Sausage and Roasted Vegetable Pasta Skillet:

1. Preheat oven to 425. Toss eggplant and summer squash with olive oil and roast in a large baking pan approximately 15 minutes, until soft.2. While vegetables are roasting, bring a large pot of water to boil. Add pasta and cook according to directions on package.3. Meanwhile, heat a large non-stick skillet over medium hot heat. Add onions and dry saute (add a little water if they stick) until very fragrant, limp and translucent. Add the red pepper and continue to saute. 4. When peppers and onion are thoroughly heated and just slightly browning, add the sliced sausage to the skillet and saute, stirring frequently.5. If vegetables have finished roasting, add them to the pan. If not, lower heat and cover until roasting is complete.6. Once the eggplant and squash have been added to the pan, stir thoroughly to combine and continue to saute over medium low heat until pasta is finished cooking.7. When pasta is al dente, drain and add to the skillet. Toss thoroughly and top with grated cheeses.8. Turn on broiler. Place skillet under broiler for about 4-6 minutes, until cheese is bubbly and the top of the dish is just beginning to brown.9.
