Scallions, raw, 1 large
Onion, raw, 1 medium (4-1/8" long)

Summer Squash, 1 large
Broccoli, fresh, 15 spear (about 5" long)
Mushrooms, fresh, 10 medium
Pasta, cooked, 6 oz (I use Angel Hair)
Olive Oil, 1 tbsp
Parmesan Cheese, grated, 2 tbsp

Here is how you make J's Veggie Pasta Saute:

chop veggies. In a large fry pan, heat about 2 or 3 tablespoons of broth. Add onions, garlic and scallions and broccoli. Saute for about 4 minutes. Add the squash. Saute until broccoli is almost done to your liking. Add mushrooms. Add chicken broth as needed for sauteing moisture. Add the cheese and stir until melted. I use a pasta season to season this dish. You can add salt and pepper.Cook pasta in boiling water until done. For Angel Hair, that is roughly 5 minutes. Drain pastaCombine the pasta with the veggies.
