How Do I Make Shepard's Pie with Asparagus?

Here is how you make Shepard's Pie with Asparagus:

Boil potatoes until fork tender. Drain. In a stand mixer or with a hand mixer, beat potatoes with the skin on until broken. Add milk, 1 tablespoon at a time until you reach the desired consistency. Add butter buds 1tsp at a time until you reach the desired flavor. Salt and pepper to taste with kosher salt. Set aside for use later.Mix water, soup mix and cornstarch with a whisk until blended. Set to the side.Peel and slice carrots into 1/4" coins. Blanch in boiling water until tender crisp.Trim asparagus and blanch in boiling water until tender crisp. In a large skillet, brown beef with onions and garlic. Turn down heat and add parsley and thyme. (Dry parsley can be used, but the fresh is inexpensive and really adds great flavor.)Turn heat the heat back up and add the water/soup/cornstarch mix. Use a spatula and make sure to degrease the pan with the liquid. (This is just loosening the meat and fat that has caramelized on the pan to add it to the gravy. Enhances the flavor without adding any additional fat.)Once the gravy has reached your desired consistency (should look creamy with the meat, not watery), pour the mixture into a casserole or other oven safe dish. Top with a layer of asparagus, a layer of carrots, and top with the potatoes.Bake uncovered at 350 until potatoes turn golden brown.Yummy!!!Serving Size:?Makes 8 servingsNumber of Servings: 8Recipe submitted by SparkPeople user KOPPERMAN.
