"Our" Shepherd's Pie

Shepherd's Pie is made many different ways (perfect for modding!) and called many different things. This is our version, from my mother :). I used the lowest sodium corn I could find and no salt to help lower the sodium content. The pan I used was actually slightly bigger than 13x9, so you may want to adjust slightly as you go. If a layer seems too deep, don't add as much of that item. Don't be afraid to modify!

Here is how you make "Our" Shepherd's Pie:

Preheat oven to 350 degrees. Brown the ground beef with the onion flakes. While that's cooking, put the creamed corn and whole kernel corn into the bottom of an ungreased 13x9 pan. Mix together well and spread out evenly. When the beef is fully browned, drain any excess fat and spread the beef mixture out evenly over the corn mixture. In a medium bowl, combine the water, milk, and Country Crock, then add the potato flakes. Stir to combine, then add the seasoning and stir. Spread this potato mixture out evenly over the beef layer. Top with the 4 slices of cheese and bake about 30 minutes, until potato is browned and cheese is melted.Number of Servings: 12Recipe submitted by SparkPeople user WARCRAFTMOM.
