Heat over medium heat and then add mushrooms in one layer. Let brown on one side and then stir until browned on both sides. Transfer to bowl.In the same pan, add another splash of the olive oil and then the ground meats. Let the meat brown on one side and then turn it and break it into small pieces and continue to cook until well browned. Drain the grease. Add the fresh thyme and the tomato paste to the meat and stir to mix well. Let cook for about a minute or so or until the tomato paste darkens a bit.Add the butter to the meat (remember to drain and even blot the meat with paper towels to remove the fat) and let it melt. Add the flour and stir for two minutes. Add the stock and Worcestershire sauce and stir until it comes to a boil, then reduce to a simmer until the gravy is the consistency you like.While the meat is cooking, add the last tablespoon of oil to a large saucepan and saut? the carrots, onions, and celery for about 10 minutes or until slightly softened.
