'Meat'
1 can lentils
1-2 cups of a variety of mushrooms your choices
1 T olive oil
1/2 cup red wine
1tsp mushroom boullion (find an organic one with NO MSG I like better than boullin it comes in a jar, but the in-organic one has MSG so read your labels)
1tsp worchestershire
1tsp tamari (soy sauce without wheat)

Potatos
2 large potatos (I use yukon and red mixed)
1-3 cloves garlic
1 T olive oil


How Do I Make Vegan Shepards Pie?

Here is how you make Vegan Shepards Pie:

1)Slice potatos put into large pot just cover with water boil on med high heat 30-45min (optional to add a sprig of rosemary and/or salt) When potatos are half way done cooking start 'Meat'2)Put wine, olive oil and boullion into sauce pan and put on medwhile slicing mushrooms (crimini is my choice) and putting your second mushroom choice in a bowl with soy sauce and worchestershire sauce (I choose beech for this but shitake would be good too) 3)Add sliced mushrooms to red wine sauce keeping the second mushroom marinating reduce liquid and sautee mushrooms until they are soft add lentils after draining most of the liquid, cook on med heat Pre-heat oven to 3504) mince garlic and add to another sauce pan with second Tbsp olive oil heat until you can just smell the garlic. 5)Drain potatos and add potatos to olive oil and garlic.6) turn off heat on lentils and mushrooms and now add marinated mushrooms stir and let sit.7) saute Potatos for extra flavor add salt and/or pepper as needed8) drain meat into large bowl until you get all the 'gravy'9) put lentil mush mix into bottom of baking dish10) Put potatos into bowl with gravy in it use mixer or hand mixer to mix until smooth season to taste ( I like to add a pinch or two of white pepper)11) put mashed potatos on top of lentil/mush layer12) put in oven and bake 30minutes or until crispy on topServing Size: Makes 5 servingsNumber of Servings: 5Recipe submitted by SparkPeople user MORALHANGOVER.
