Here is how you make Pita:

Preheat oven to 500 degrees and insert pizza stone.Put 2 cups of warm water in bowl; sprinkle yeast over water to dissolve for 5 minutes. Add sugar and whisk. Mix salt and flour. Add 4 cups of flour to mixture and blend with spatula. Add last cup by hand as you knead the dough. Knead for 5 minutes until dough is smooth and tender. Let rest 10 minutes.After oven has maintained 500 degrees for 15 minutes, divide dough into 8 equal parts. Shape each piece into a ball by stretching the outer layer around the whole ball. Press together on the bottom to create a seal. Bake two pitas at a time for 2 minutes each.
