Use one small cast iron pan to make pizza, single serving for a special treat. This recipe can make 6 single serving pizzas, the batter keeps really well in the fridge. I used a 5" cast iron pan. You can adjust the calories by limiting or adding meat. To up the protein for this meal I paired it with a greek yogurt smoothy recipe from another sparker. --OMG was the only comment I got from my mom, then noshing resumed. She had been missing pizza and the oven "fried" crust on this pizza comes real close, like a tiny deep dish pizza.

1 c milk
1/2 TB oil (grape seed or olive oil, can use veg oil)
2 eggs
Spices: Oregano, italian parsley, basil, black pepper, red pepper flakes.

Cheese - melty cheese (mozz, provolone, cheddar, etc.) 1/2 oz per pizza.
Veg - red bell, onion, black olive, mushroom, yellow zuchini, red onion, no limits here. All the veg that will fit is good to go.
Meat is optional - 1/2 slice bacon, 1 oz chicken, 1 oz ground beef, 1 oz turkey sausage, 1 oz shrimp. Calories will vary with these changes.
Tomato paste, very slightly thinned with water to make it easier to spread. (Lycopene!) Light or heavy, no matter, low in calories.

Oven to 450F.Fry toppings (spray oil .5 sec)Top with batter...drizzle over until mostly covered.
