Here is how you make Leek and Pancetta Pizza:

Preheat the oven to 450f and a skillet to medium-low heat. Dice the pancetta if not so already. Drizzle 1 of the 2 Tbls olive oil in the pan and put in the pancetta before the oil smokes. You're looking for even browning of the little pancetta bits. Give it a couple good stirs or shakes of the pan, about 5 minutes. Cut the green part of the leek off and save it for soup or stock. Salt, Pepper and whatever dry herbs you like, then spread out the sauteed mixture, then tear the cheese to bits and spread it on.Put that on your pre-heated pizza stone for 8-11 minutes, or until the cheese is bubbling and starting to brown.
