1 medium Spaghetti Squash (3 cups)
1 cup diced lean ham
6 cloves garlic
1 tsp crushed red pepper flakes
.5 cup nonfat milk
2 eggs
.5 cup Parmesan Cheese, grated
15 cherry tomatoes (halved)
.5 cup fresh mushrooms (slices and pieces)
2 oz soft goat cheese
2 tbsp dried parsley



How Do I Make Carbonara Deep Dish Squash-Crusted Pizza?

Here is how you make Carbonara Deep Dish Squash-Crusted Pizza:

Microwave squash about 15 minutes or until tender. Preheat oven to 425˚. Allow squash to cool while crisping diced ham in a large cast iron (or other non-stick oven safe) frying pan. Add garlic and crushed red pepper. Reduce to low heat. Toss squash (removed from shell with a fork to make pasta-like strings) with ham mixture and .25 cup parmesan cheese. Mix eggs and milk together and pour mixture over squash right in the pan. Spread everything evenly across the bottom of the pan and allow egg to set (about one minute over low heat). Place entire pan in the oven for about 5 minutes to make "crust."Remove from oven and sprinkle with goat cheese, halved tomatoes, mushrooms and parsley. Top with remaining parmesan cheese.
