1/4 c sliced black olives
1/4 c sliced fresh basil, divided
4 (6oz) flounder fillets
1 tbsp crushed red pepper flakes (optional)

1. In a large skillet, heat olive oil over med heat. Add leeks and garlic; cook and stir until soft.2. Add wine and bring to boiling. Reduce heat and simmer 5 minutes. Add tomatoes with juices, chicken broth, olives and half the basil. Simmer 5 minutes.3. Season fillet with salt and pepper to taste and arrange over tomato mixture. Cover and simmer about 10 minutes or until fish flakes easily with a fork, turning once halfway through cooking.4.
