Here is how you make Bacon Wrapped Pork Loin:

Preheat oven to 350 degrees. Line a large baking dish with aluminum foil. Place the pork loin in the pan and score the top of the meat. Season with pepper.In a mixing bowl combine garlic, ginger, crushed red pepper, soy sauce, mustard, vinegar and honey. Whisk together until combined. Pour over the pork loin evenly.Take your bacon slices and drape over the pork loin and tuck ends underneath.Bake for 1 hour. Remove from oven and cover with foil. Bake an additional 30 minutes or until internal temperature reaches 165 degrees.To cook the veggies, In a large skillet heat coconut oil. Add sliced mushrooms and diced onions. cook about 5 minutes until veggies are tender. Add rice, water and 1 cup of pan drippings from the pork loin. Bring to a boil. Reduce heat and cover.
