In a large dutch oven, pour oil in and heat over medium-high. Pat tenderloin dry and lightly season with pepper and salt if desired. Brown tenderloin on all sides. Set meat aside. In same pot mix remainder of ingredients and bring to a boil. Place meat in sauce and simmer over low heat (uncovered) for 2.5 hours, turning meat every half hour.Removed meat from pot and turn heat off. Set meat into a pie plate and shred using a fork.
