1 cup roasted Anaheim Green Chiles (canned green chiles will work as well)
1 can diced tomatoes (any type are fine but Muir Glen Roasted Red Tomatoes add great flavor.
One medium Onion diced (any type)
1/2 to 1 cup flour
1/8 to 1/4 cup canola oil
garlic
Salt
Pepper
6-8 cups water or chicken broth


How Do I Make Vick's Pork Green Chile?

Here is how you make Vick's Pork Green Chile:

Dice the pork into 1 inch cubes.Place pork in a pot with 3 Tbsp oil and cook until all sides are browned. When the pork is browned remove from the pot. Add several more Tbsp of canola oil, enough to cover the bottom of the pan and begin adding the flour on medium to high heat to create a roux. Cook the flour and oil until it is light brown. Add the pork, tomatoes, onion, garlic, green chiles and water/broth and simmer to a boil. It is best to add half of the water and let it cook down a bit and then add the rest. Add water or broth to desired consistency. The nutritional values are based on 12 cups total.Add spices to taste, the addition of various chile powders and chile piquin is suggested but all to taste.
