Frylight Oil, spray oil as necessary appx 10 sprays
Garlic, 3 cloves
Cubed Pork Steak, 500g
Onions,1 large, thinly sliced

Whole Spices:
Black or pink peppercorns (10)
Cumin seeds, half tsp (or to taste)
Whole Cloves, 5
Cinnamon stick, appx 1 inch piece
Dried Chillis 2-3 (or to taste)

Ground spices:
Turmeric, 1 tsp
Chilli powder, 1 tsp (optional)

Canned Tomatoes, 400 grams
Tomato puree, 4 tbsp
Water, warm, 300 mL
Coconut Milk 200ml


How Do I Make Chilli Coconut Pork?

Here is how you make Chilli Coconut Pork:

Grind all the whole spices together in a mill or with pestle and mortar to make a spice mix (include dry chillies but not chilli powder). Heat oil in a large saucepan on low to medium heatAdd garlic and fry for 1 minute or until aromatic but not brownAdd spice mix you've just prepared from whole spices and fry for 30 seconds Turn up the heat to medium/hot, add pork and fry to seal and release juicesAdd onions and fry for a minute or two.Add more spray oil if required Add turmeric Add chilli powder (if using)Fry for a further 30 seconds (just to release the flavour in the spices)Add tomatoes and mix well.Mix tomato pur?e with the warm water and add to the panMix well(Coconut milk is added towards the end of cooking -details after cooking times)Simmer for appx 1 hour (hob)If using slow cooker, time according to slow cooker instructions. Approximate guide is 4 hrs high, 6 hrs medium, 8 hrs low.You could also put this in a casserole dish and place in a medium oven for about 1 hour. Add the coconut milk halfway through cooking on hob or 1 hr from the end of slow cooking/casserole.Serve with basmati rice, naan or chappattis and cucumber raita. I also serve mine with a cauliflower and chickpea curry side dish.
