1 green bell pepper
1 green bell pepper
1 yellow bell pepper
4 carrots
3 garlic cloves minced
1 onion chopped
2 tbsp oil (olive or vegetable oil)
1 or 2 habenero pepper (depending on how spicy you want it)
2lbs pork tenderloin
1 tbsp curry powder or paste


How Do I Make Curry Bell Pepper and Pork Tenderloins?

Here is how you make Curry Bell Pepper and Pork Tenderloins:

Start by cutting your pork tenderloins into strips or cubes. Simmer on medium low heat with some onions and salt until done. Leave accumulated juice and cooked pork in pot. Set aside.Cut your bell peppers into thin strips. Slice your carrots, mince garlic, chop the onions and habenero.Start by heating the oil on meduim high heat. Add your garlic and onion and cook for a few seconds till it becomes fragrant. Add your sliced bell peppers and cook for 2 minutes. That way it's not completely cooked through. Add pork tenderloins with accumulated juices, curry powder or paste, habenero and carrot.Reduce the heat to low and continue to simmer. You do not want to overcook the carrots or the bell peppers. This should take about 5 - 10 mins or until the carrots are cooked but still have some crunch to it.. Add some salt to taste. You can add a little bit of water if you would like more sauce. Remove from heat and serve over rice (white or brown).Hope you enjoy it as much as i did. Great taste and low fat.
