Combine first 6 ingredients together in a large sauce pan; fill with enough water to cover the roast. Simmer on low heat for about 2 hours, or until meat is fork tender. Remove meat and strain veggies. Shred meat with a fork, and place back in pan with the veggies and a little bit of cooking liquid to reheat just before serving. For each serving, place approx 1 oz of meat and veggie mix, a little lettuce, cheese, sour cream, and guacamole (opt) in a tortilla.
