1. Mix blackberry spread, red wine vinegar, sugar, and red pepper flakes in a small bowl until blended. Set aside.2. Heat large skillet over medium-high heat until hot. Coat skillet with non-stick cooking spray. Add oil and coat bottom of skillet. Add half of the pork slices and sprinkle with half of thyme and half of salt. Cook 2 minutes. Turn and cook 1 minute on other side. Remove and set aside. Repeat with remaining prok, thyme and salt.3. Add blackberry mixture to skillet. Bring to a boil over high heat. Add reserved pork slices, discarding any accumulated pork juice. Cook about 4 minutes until pork is richly glazed.
