This recipe is so easy to make! Because I have a Lap-Band, I used the SPLENDA® Brown Sugar Blend in this recipe but if you want or need to avoid all sugar, you may replace it with 3 Tablespoons of the SPLENDA® that measures like sugar (not the packets) and you will need to find a sugar-free ketchup. The nutritional information will need to be changed accordingly.It is important to begin with very fresh and very lean boneless pork chops. I found a large Family- Pack of 6 chops that weighed 2.30 pounds. When I removed every last bit of fat, I ended up with exactly 2 pounds of lean meat.Other similar recipes call for the sauce to be cooked and thickened before pouring over the chops but I found that the sauce thickens very nicely on its own without pre-cooking it, thus saving a step and time! Just a side note: The first time I made this, I forgot the ketchup and it was still delicious.

Preheat oven to 325 degrees F.Place pork chops in a 13"x9" baking pan sprayed with PAM® Olive Oil flavored cooking spray.In a small bowl, whisk together the SPLENDA®, cornstarch, vinegar and soy sauce until there are no lumps from the cornstarch. Stir in the ketchup and the pineapple. Pour over the pork chops and cover with aluminum foil.Bake for 1 hour and 15 minutes.
