Here is how you make Italian Pork Cutlets Piazzolla:

Heat large saute pan. Add cold oil, then add salt and peppered cutlets. Brown on high on both sides. Remove from pan and set aside. To hot pan, add onions, cook until soft, about 3-4 minutes. Add entire can of tomatoes and wine. Add herbs de provence. Cook covered for about 10 minutes until sauce thickens a bit. Stir sauce.
