2 lbs of cubed porked loin
1 8oz bag of shredded mozzarella cheese
1 8 oz bag of 2% sharp cheddar cheese
1 zucchini, diced
1 summer squash, diced
? cup red onion, diced
10 oz container of fat free cottage cheese
1 red bell pepper, diced
1 box of 14 manicotti shells
minced garlic to taste
basil to taste
oregano to taste
black pepper to taste
thyme to taste
tarragon to taste
other spices to taste
olive oil cooking spray
2 skillets
1 8 x 14 pyrex cooking pan
2 collanders


How Do I Make Pork Manicotti Alfredo?

Here is how you make Pork Manicotti Alfredo:

Preheat oven 350 degrees. Spray both skillets with Olive Oil SprayBrown pork loin until it is cooked through, then chop in the blender, in very small bits.Dice all the veggies, into tiny bits and then saute until onion is carmelized and squash is soft.Boil Manicotti in large pot according to directions on box.Drain pork in one collander and veggies in the other. Then place together in large mixing bowl. Drain cottage cheese and add to mixture.Layer the bottom of Pyrex dish with thin layer of sauce.Gently stuff drained Manicotti with mixture and place in Pyrex dish.Take remaining mixture and sprinkle over manicotti, then pour remaining sauce over, making sure that entire dish is coated.Sprinkle entire bag of mozzarella cheese over the dish.Sprinkle half the bag of sharp cheddar over dish for color.Place in oven for 40 mins covered with foil.Then remove with foil for an additional 10 mins for browning.Let cool for about 5 minutes then serve.
