Found this on the Kraft Foods site. I tweaked it a bit and added red pepper instead of yellow as well as a bit more musrooms and snow peas. Not included with recipe:I served this with whole wheat linguini,but could also be served with brown rice. You could also top with chopped green onion if you choose. Very easy to make and very yummy!

1 1/2 cup fresh snow peas
1 cup red sweet pepper, cut into strips
2 cloves garlic, minced
1 Tbsp minced ginger root
1/4 cup Kraft Light Catalina Dressing
1 Tbsp lite soy sauce
1/4 cup Planters Cashews (with sea salt)

Heat oil in wok or large skillet on high heat. Add meat; sitr-fry 1 min.Add mushrooms, red pepper, snow peas, ginger root and garlic. Stir-fry on medium-high heat 3-5 minutes or until meat is lightly browned.
