Heat butter and oil in large pan.2. Add pork and cook for 5 mins until sealed. Set aside with slotted spoon.3. Add leek and cook for about 5 mins on medium.4. Add flour and paprika stirring on heat for about 2 mins.5. Slowly add the stock, stirring as you go.6. Add back pork, mushrooms and salt and pepper. Also sherry if using. I used half tbsp sweet muscat vinegar and that worked well.7. Cook covered for 20 mins.8.
