Mix EVOO, thyme, chicken broth, salt & pepper in a bowl. Combine cheese in another bowl. Roll pork in the liquid mixture then in the cheese. Place on a roasting pan and sprinkle remaining cheese over the top. Roast, uncovered, for 40-50 minutes until meat thermometer reaches 155. Remove pork from pan and cover.
