In a bowl, mix sugar, cumin, coriander, cinnamon, pepper & salt. Mix the spices with the pork, then toss with the oil. Let stand at 15 mins while preparing the avocado creme.Whisk the avocado with the sour cream, lime juice & salt in a small bowl. Press a piece of plastic wrap directly onto the surface to keep the creme from turning brown.Coat a large skillet with olive oil spray. warm over medium high ehat for 2 minutes. Add the pork & cook, turning once or twice until browned & cooked thru. Add the pineapple & cook 3 to 4 minutes or until hot. Add cilantro. Remove from heat.To assemble, place 3 tortillas on a plate.
