*Arborio / Risotto Rice (uncooked), 2 tbsp
Butter, salted, 4 tbsp
Salt, 1 tsp
Pepper, black, 1 tsp
Garlic (chopped), 1 clove


How Do I Make Tave Kosi (Pork)?

Here is how you make Tave Kosi (Pork):

Preheat oven to 350? F. Heat a cast iron skillet on medium high. Cut pork into smaller pieces (I prefer 1-2 inch cubes) and season with salt and pepper to taste. Add 2 tbsp butter to skillet and sear edges of pork. Remove skillet from burner and place in oven for 15 minutes to finish cooking pork.Meanwhile, combine yogurt and eggs and mix thoroughly. When pork is finished, remove from skillet and set aside. In the same skillet on medium add remaining 2 tbsp butter. Once it's melted add the rice and chopped garlic. Cook for 1-2 minutes until lightly golden brown. Slowly add yogurt and egg mixture to the skillet stirring frequently. Once well mixed, add pork and cover under sauce.Cook uncovered for 40-45 minutes in oven.
