.25 teaspoons coarsely ground black pepper
coking spray
4 new potatoes (any small works - red preferable)
4 oz mushrooms cut in half (1.5 c)
1 medium bell pepper (any color)
1 medium onion, cut into coarse wedges
1 medium tomato, but into 8 wedges

Makes 4 servingsAs a note, the values calculated by Spark are much higher than the values according to the recipe for calories, carbs, protien etc.Heat oven to 425 degrees. Spray jelly roll pan, 15.5x10.5x1 inch, with cooking spray. Remove fat from pork. Mix herbs in small bowl. Spray both sides of the pork chop with cooking spray and sprinkle with 1 to 1.5 teaspoons herb mixture. Place pork chops in each corner of the pan.Mix potatoes, mushrooms, bell pepper and onion in a large bowl. Spray vegetables two or three times with cooking spray; stir. Sprinkle with remaining herb mix. Toss to coat. Spread evenly in center of pan.Bake uncovered 45 minutes (I would suggest checking at 30). Turn pork; stir veggies. Place tomato wedges on vegetables (if you put them in at the beginning they are fine as well).
