2 tbsp vegetable oil
2 tbsp fresh rosemary
1 tbsp fresh sage
1 large garlic clove, rushed
1 large shallot, chopped
2 tbsp cornstarch
1/4 c sherry
1 c beef broth
salt
pepper
2 pinches red pepper flakes

Here is how you make Savory Stovetop Pork Medallions:

Makes 6 servings. Preheat oil at medium heat. Pat meat dry. Salt and pepper all sides (optional). Add scallion, sage, and rosemary. Cook until scallion softens. Add crushed garlic and pork. Cook until light brown on both sides. Remove from pan. Add corn starch mixed with just enough water to liquify. Stir in sherry, grated lemon peel, and 1-2 pinches of red pepper flakes. Cook for 3 minutes. Stir in beef broth. Cook for another 3 mins or until sauce thickens slightly. Put pork back in pan with lemon juice and any leftover vegetables. Heat through.
