Heat oil in large skillet over medium heat. Add pork chops and brown on both sides; drain. Combine soup, chicken broth, mustard,garlic, thyme and pepper in slow cooker. Add potatoes and onion stirring to coat. Arrange pork chops on top of potatoes. Cover and cook on low setting for 8 - 10 hours or on high setting for 4 - 5 hours.
