Trim tenderloin and cut into 4 inch long chunks. Season and brown in a skillet over olive oil and 1/4 cup sliced onion. When browned, squeeze citrus juices into a slow cooker, also add salsa. Now insert Tenderloin on top of juices (turn to coat) and chop the remainder of the onion and put on top of tenderloin. Cook on low for 7-8 hours or on high for 5-6 hours. (Optional, sqeeze another lime over the tenderloin after onions are added)**NOTE** goes well with 1/2 cup of black or kidney beans, Mission Low carb wheat tortilla and 1/2 of sliced avocado.
