2-1/2 tbsp olive oil

How Do I Make Smothered Pork Chops?

Here is how you make Smothered Pork Chops:

Heat olive oil in cast iron pan. Dry pork chops with paper towels, season chops and brown in olive oil. Remove chops, to pan add sliced onions, garlic, peppers, and saute until onions are translucent and mushrooms began to caramelize. Add tomatoes and wine, stir to combine. Remove vegetables, put chops back into pan, put vegetables over top of chops. Cover and cook over very low heat until chops are tender.
