9 oz pork loin
2 Tbsp vegetable oil
1 garlic clove, crushed
2 Tbsp gochujang chilli paste
1 tsp Korean chilli powder
3.5 oz potato, cubed
3/4 oz fresh root ginger, peeled
1 green chilli, sliced
1/2 leek, sliced
1 zuccini, sliced
1 tsp sesame oil
2 oz minari, watercress or arugula, roughly chopped
1 tsp sesame seeds, to garnish


How Do I Make Pork Gochujang Stew?

Here is how you make Pork Gochujang Stew:

Trim any excess fat from the pork and roughly cut the meat into bitesize cubes. Place a heavy pan over a high heat and add the vegetable oil Add the garlic and pork and stir until the meat is lightly browned on all sides. Then ad the gochujang and chilli powder, and briefly saute the ingredients, evenly coating the meat with the spices.Add the potato, ginger and chilli and then pour in enough water to cover all the ingredients. Bring the pan to the boil and add the leek, zucchini and sesame oil. Stir the mixture well and cover the pan. Cook over a high heat for 3 minutes, then reduce the heat and simmer for a further 5 minutes. Skim off any excess fat from the surface as the dish stews.Remove from heat and stir in the minari, watercress or arugula. Discard the ginger and ladle the stew into bowls.
