2 slices Bacon, cut into strips
1 Pork Loin Chop, cut into 3 equal sized pieces
1 cup Onion, chopped
1 cup Carrot, chopped
1 cup Celery, chopped
1/2 cup Tomato, canned or raw, chopped
1 tbsp. Tomato Paste
2/3 cup Green or Red Lentils
1 1/2 cup Water or Vegetable Stock
1 Bay Leaf
Salt & Pepper to taste


How Do I Make Quick Lentil and Pork Stew?

Here is how you make Quick Lentil and Pork Stew:

Chop all vegetables in fairly large dice. In a large deep saucepan or pot, start softening the bacon. After about 1 minute, add the onion, carrot and celery and cook for about 1 minute on medium heat. Make a space in the centre of the pot/pan and brown the pork chop lightly on both sides. Add the tomato, tomato paste, stock and bay leaf and mix thoroughly. Rinse the lentils and add to the pan.
