In a small bowl, combine the broth, soy sauce, and vinegar and stir to blend. Set aside. On a plate, spread 2 tablespoons of the cornstarch. Dredge the pork in the cornstarch, shaking off the excess. In a large non-stick skillet, heat the oil over medium heat. Add the pork and cook, stirring frequently, until golden brown, about 3 minutes.
