Here is how you make Pulled Pork Stuffed Peppers:

Makes 2 servingsPrecook brown rice. Sautee onion, garlic, Jalapeno in a fry pan sprayed with non- stick spray. When the veggies start to look bright in color, add shredded pork , water and seasonings. Simmer until half of the water evaporates, add brown rice. Mix together and stuff into green peppers. Place in pie pan with an inch of water on the bottom, Cover peppers with foil and bake for 30 minutes. Take foil off of the peppers and place 1/2 slice Pepper jack cheese on top.
