-2 pounds pork tenderloin
-1/2 teaspoon kosher salt
-1/2 teaspoon ground black pepper
-2 cloves garlic, minced 1/2 onion
-2 cups red wine, ie Burgandy
-2 (.75 ounce) packet dry brown gravy mix
-1c beef stock
-1tbsp olive oil
-1tbsp I Can't Belive it's Not Butter light
-Sprig of fresh Rosemary (nice, but not needed)


How Do I Make Burgundy Pork Tenderloin?

Here is how you make Burgundy Pork Tenderloin:

1) Preheat oven to 350 degrees F (175 degrees C). 2) Rub minced garlic, salt and pepper over pork.2) Saute rosemary in olive oil & butter over over medium heat. Add pork, and sear on all sides till lightly golden. If rosemary begins to burn, remove it from pan. 3) Place pork in a 9x13 inch baking dish. Add wine to pan & deglaze the pan drippings, and then add to baking dish.4) Cook pork for 45 minutes. Remove meat from baking dish, and add the gravy packets to baking dish & stir.5) Serve pork tenderloin with gravy. Thre will be more than enough gravy to serve over potatoes.NOTES:--You can skip step 2, and just season the meat then bake.
