Here is how you make Pork Tenderloin Saltimbocca:

Slice the port tenderloin on a diagonal into about 8 pieces. Slightly pound each piece to 1/4 inch thick and sason each slice of meat with salt and pepper. Place a couple of sage leaves on each piece of meat andf then wrap it in a slice of prosciutto.Preheat a large skillet over med-hi heat w/ 2 T of olive oil. Working in two batches, sear the wrapped pork until cooked through, about 3-4 minutes per side. Add anothe T. of oil to pan before cooking the second batch.
