Add oil and heat until it begins to ripple. Season chicken strips with salt and pepper and cook in hot oil until lightly browned, about 5-6 minutes. Add in shallot, bell pepper, jalapeno, and garlic and cook until softened, about 5 more minutes.In a small bowl, whisk together hoisin sauce, lime juice, water, and ginger. Add to the wok and stir chicken and vegetable mixture to coat.
