1 lg onion, chopped
2 ribs celery, chopped
3 gloves garlic, chopped
S&P to taste
1 lb. cubed pork
1 16oz can stewed tomatoes
1 8oz can tomato paste
2 oz wine


How Do I Make Pork Guillsado?

Here is how you make Pork Guillsado:

Salt and pepper the pork. Heat 2Tblsp oil in a pan or dutch oven. Brown pork in small batches. When finished, place onions and celery in the pot and brown. When they are almost soft, add garlic. Saute a few minutes more so garlic doesn't burn. Add wine to deglaze the pan. Also add tomatoes and paste. Add pork back in and bring to low heat. Simmer for 2-3 hours. If you'd like, you can add to the crockpot at this point. Stir occasionally. If cooking on the stove, you can cover or not depending on how thick you want the stew.
