How Do I Make Pork and Veggies for One?

Here is how you make Pork and Veggies for One:

Cut pork into pieces and grill it in a nonstick pan-- I use a cast-iron skillet. Remove when cooked through.Heat olive oil in pan. Add garlic. When it is light brown, add onions and saute until they begin to soften. Add a dash of salt and one of pepper. Add green beans, cook for five minutes, and add sweet peppers. Grill until veggies have been caramelized a bit. Add 1/4 cup water, cooked pork, vinegar, sugar, and cover (I use aluminum foil because I have no lid for my pan). Steam until veggies soften. Remove lid and allow sauce to reduce.I served this over brown rice.Number of Servings: 1Recipe submitted by SparkPeople user MORFUDD.
