Here is how you make Potato Bacon Frittata:

Preheat oven to 350 degrees.Dice and cook bacon according to package directions. Set aside.Par boil potatoes and set aside.Heat pan over medium-high heat and add olive oil, shallots, garlic and mushrooms. Cook for about 10 minutes. Set aside to cool.In a large bowl beat together eggs, milk, salt and pepper to taste. Add mushroom mixture, potatoes and bacon.Lightly spray a 2 quart baking dish with cooking spray. Pour the egg mixture into the dish. Thinly slice the tomato and arrange on top of the egg mixture.
