Here is how you make Holly's Two Potato Gratin:

Peel & slice onion. In skillet - heat oil on medium heat. Add onion, sprinkle with 1/8 tsp salt. Cook 6 minutes or until golden. Turn often - cool slightly. Meanwhile peel potatoes - cut into 1/8" thick rounds. Arrange 1/2 of potatoes & 1/2 of onion in shallow 2 qt. baking dish. Sprinke with 1/2 of cheese. Arrange remaining potatoes & onion on top, creating a pattern if desired. In saucepan, whisk half & half inton cornstarch to dissolve. Add margarine & 1/4 tsp salt & pepper. Heat on medium heat until bubbles begin to form around edges, whisking while heating. Pour over potato mixture. Cover with foil bake 30 minutes at 400 degrees. Uncover - sprinkle remaining cheese on top - bake 25 th 30 minutes until golden & bubbling. Cool slightly t serve warm or cool to room temperature, cover & refrigerate overnight.
