.5 cup (not packed) Cottage Cheese, Nonfat
1 bunch Broccoli, fresh, chopped
3 cup Spinach, fresh, roughly chopped
.3 cup Parsley, chopped
1 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry
3 medium Egg, fresh, whole, raw
2 sweetpotato, 5" long Sweet potato, sliced into "coins" 3-5 mm thick
2 cup, shredded Cheddar or Colby Cheese, Low Fat
Salt and Pepper to taste

Here is how you make Quinoa and Sweet Potato Gratin:

Preheat oven to 385 degrees FUse a pot or a tall-edged pan. In olive oil, on medium heat, saute garlic until fragrant and softenedSprinkle flour over the garlic, and toast for a few minutesIn a separate pot, start cooking the quinoa as described on packageOnce flour has browned slightly, add 1/2 cup of the milk, stirring constantly to avoid lumps.Add the cottage cheese, stirring to melt as many of the lumps as possible.Stir in the remaining milk. Put on medium-low heatSpread slices potatoes on an oil-sprayed baking sheet, trying to single layer as possible. You may use the baking dish you were planning to use for the gratin for any remaining pieces (these ones just won't be as crispy) be sure to spray this dish prior too, to avoid sticking. Bake potatoes in the preheated oven.Beat eggs, and using a spoon, add some of the milk mixture to the eggs to slowly raise its temperature (if added too quickly or without stirring ,you will get egg lumps). Once about 1/4th a cup of the warm milk mixture has been added to the eggs, pour eggs into the milk/garlic mixture while stirringAdd broccoli, spinach and parsley into the mixture, as well as salt and pepper to taste.Let this sit to thicken as you check on the quinoa. When done, add it to the milk mixture and stir. If the mixture is far too thick, you can add a little water, broth, or milk. Check on potatoes - they should be crisping on their edges, and softened in the center. If not, cook for another 5-10 min or so. Remove from the oven.Remove any potatoes you may have placed in your rectangle dish. Pour gratin mixture into this dish. Sprinkle 1/2c cheese on top.layer sweet potato coins over the cheese.Sprinkle remaining cheese on top.Bake for 10-15 minutes until cheese is melted.
